Reduce dependencies

@transloadit/node pulls in ~189 dependencies which feels like a lot, particularly as we mostly just use it to call the createAssembly function. It's not causing any tangible issues for us, I just wanted log an issue on the oft-chance there were any quick / easy wins.

It seems migrating from the older got to either native fetch or the recommended ky (fetch wrapper made by the same people as got) could be a nice first stab.

Hi! This is definitely something we've been wanting to do. Not only to reduce dependencies, but also to be able to use the SDK on more platforms like in the browser. That's why we haven't done it yet, because we want to first decide which platforms to support and then decide on http request library based on that.

Yes, we've been chipping away at this, we can do better still tho: https://github.com/transloadit/node-sdk/blob/main/packages/node/package.json#L35-L54.

One problem with fetch is that it does not expose progress events btw.
