Bump version to 2.0.1

Summary

Bumps the root package and all example workspaces from 2.0.0 to 2.0.1. This is the patch release that ships the fix for example servers crashing at startup on Node older than 20.11 (#787), plus the canonical repository.url form (#773), which removes the "normalized" warning from every publish job.

The library itself is unchanged; the fixes are in the example servers, which are published as their own packages (including @modelcontextprotocol/server-pdf).

Two commits:

• Bump version to 2.0.1: version fields only, no dependency, lockfile-resolution or source changes.
• Fix dependency isolation check against @modelcontextprotocol/client 2.1: client 2.1.0 (published today) references ErrorOptions in its typings, which needs the ES2022.Error lib. The check compiles its throwaway consumers with lib: ["ES2020", "DOM"] and skipLibCheck: false, and the server-only consumer gets client as an auto-installed peer, so it resolved to 2.1.0 and failed tsc. The consumer tsconfig now adds ES2022.Error.

Test plan

• npm run bump patch then npm run check:versions passes (root 2.0.1); every changed line in the bump commit is a "version" field, and the lockfile has no non-npmjs resolved URLs.
• npm run test:dependency-isolation against the public registry: fails on the base of this branch with Cannot find name 'ErrorOptions' (same as CI), passes with the second commit.
• The pre-commit hook (npm run build:all, prettier) passed on a clean npm ci for both commits.
• The full test suite is left to CI on this PR.

After merge, gh release create v2.0.1 on main starts the publish workflow.
