Add renewal callouts to opportunity stages

Summary

• Adds a new "Renewals" section to handbook/sales/opportunity-stages.md with two callouts:
  • When a renewal oppty is confirmed to churn, set the stage to "Meeting set" (0% probability) to signify the churn.
  • When renewals are created, they should be set to "PoV (Proof of Value)".
