lab is installed into /opt/stellar

The lab is currently installed at /opt/stellar/lab, however everything under the /opt/stellar folder is designed so it can be mounted as a persistent volume replacing anything already in that directory inside the image (see the readme). The start script then copies things into the /opt/stellar as needed.

The lab should be installed into the /usr/local directory structure.
